Looking for an easy gluten-free pancake recipe? Since I’ve been eating healthier and cooking at home more,  I developed my matcha gluten-free, high protein recipe a few weeks ago and since then, have been our go-to.

One of the main ingredients is matcha green tea powder. Studies have shown that matcha has high levels of antioxidants and shown to lower cholesterol and stress. It also provides fiber, magnesium, vitamin C, and zinc. 

You’re going to love these pancakes because they are soft, fluffy, and healthy. If you are not a matcha fan, try this recipe. Enjoy!

Matcha Green Tea Pancakes Recipe (Gluten-Free and High-Protein)

Ingredients

  • 2 Eggs
  • 1 cup Spinach
  • 1/2 cup Cottage Cheese (Low-fat, or your preference)
  • 1/2 cup Oats (Gluten-free)
  • 1 teaspoon Matcha Powder
  • 1 teaspoon Vanilla Extract
  • 3 tablespoons Butter or Ghee

Note

You can freeze cooked pancakes for up to 2 months.

Directions

Step 1
Combine all the ingredients in a blender/food processor (I used my nutribullet). If your batter is too thin for your liking, add more flour accordingly.
Step 2
Melt the butter in a large cast iron skillet or griddle over medium heat. To make a pancake, ladle about 1/3 cup of the batter onto the skillet. Pour enough batter to make 1-3 pancakes at a time.
Step 3
Cook until bubbles break the surface of the pancakes and the sides are golden brown, about 2-3 minutes. With a spatula, flip the pancake and cook 1-2 minutes more on the other side. Repeat with the remaining batter, adding more butter/ghee to the skillet as needed.
Step 4
Transfer your pancakes to a plate and drizzle with your favorite syrup and fruit.
