Quinoa with Baked Sweet Potato and Cranberries
Ingredients
- 1 Sweet Potato (Dice into small cubes)
- 1 bag Quinoa
- 1/2 cup Sweet dried cranberries
- 1 teaspoon Sea Salt
- 1 teaspoon Pepper
Directions
Step 1 | |
Cook quinoa in a hot boiling stove until fully cooked, set aside. | |
Step 2 | |
Dice the sweet potato into small cubes, lay onto a cookie baking sheet, drizzle the extra olive oil (or coconut oil) all over, sprinkle sea salt and pepper. | |
Step 3 | |
Bake the diced sweet potatoes for 45 minutes in the oven at 400 degrees. | |
Step 4 | |
Once the sweet potatoes are done baking, add the cooked quinoa and cranberries into a large bowl. | |
