Despite the fact that I love cooking in the comfort of my own kitchen, I also understand the reality of my busy lifestyle. And, I also understand that many other people are in the same situation – us food bloggers love to eat and I try to cook healthy at home, when I can. I have been wanting to try a new healthy recipe with the new cast iron I brought last week. Since I had three bags of quinoa sitting around, an idea popped in my head. Why not add cooked quinoa and cranberries?

Since quinoa can be bland, on its own, I decided to pair my dish with sweet potatoes to balance things out. This meal is easy to make since the steps are minimal.  All you have to do is bake the sweet potatoes until they start to caramelize in the oven, cook the quinoa in a pot of boiling hot water, then mix the quinoa, sweet potatoes and cranberries together.

Quinoa with Baked Sweet Potato and Cranberries

Ingredients

  • 1 Sweet Potato (Dice into small cubes)
  • 1 bag Quinoa
  • 1/2 cup Sweet dried cranberries
  • 1 teaspoon Sea Salt
  • 1 teaspoon Pepper

Directions

Step 1
Cook quinoa in a hot boiling stove until fully cooked, set aside.
Step 2
Dice the sweet potato into small cubes, lay onto a cookie baking sheet, drizzle the extra olive oil (or coconut oil) all over, sprinkle sea salt and pepper.
Step 3
Bake the diced sweet potatoes for 45 minutes in the oven at 400 degrees.
Step 4
Once the sweet potatoes are done baking, add the cooked quinoa and cranberries into a large bowl.
